Hondarribi zuri

ORIGIN

Getariako Txakolina Designation of Origin, estate-owned vineyards aged between 15 and 20 years, trained on trellises with southeast and north orientation, clay, marl, and limestone soils, and sustainable viticulture with 80% of the work carried out by hand. 

WINEMAKING AND AGING

Hand harvesting, gentle gravity pressing, alcoholic fermentation at 12 °C for one month with native yeast. Aged on the lees for 10 months in 750 L French oak foudres made from very fine-grain, untoasted oak.

STORAGE CONDITIONS

Store in a horizontal position in a cool, dark place, between 12–16 °C.

SERVING AND CONSUMPTION

Consume young and serve chilled in a glass, between 8–12 °C.

TASTING NOTES

APPEARANCE

Bright greenish-straw hues, clean and luminous, reflecting its aging on the lees and the vitality of the grape.

NOSE

Aromas of ripe stone fruit, white flowers, and mineral, saline notes, with a subtle presence of well-integrated oak that adds complexity without overpowering.

PALATE

Harmonious and complex, with acidity well balanced by the alcohol and a good, rounded structure. A delicate hint of natural carbonation adds freshness and vibrancy. Long, persistent finish, leaving an elegant and very pleasant aftertaste.

FOOD PAIRING

Perfect with seafood, fish, meats, and cheeses. Fresh and balanced, it complements without overpowering. Ideal to enjoy on its own or in good company.
